Astragalus Chicken Soup: A Chinese Food Wisdom Ritual
黄芪炖鸡汤
Traditional Logic
In the traditional view, the body has an outer layer of energy that protects it from the environment. Astragalus helps lift and strengthen that layer, while chicken and red dates provide the nourishment, like warming a house before a cold wind arrives.
The Goal
A traditional soup that introduces the idea of Protective Qi through a warm, steady bowl.
A gentle traditional soup for days when your outer layer feels thin and your energy feels easily scattered.
The Ingredients
300g Free-range Chicken
A deep reservoir of nourishment. Provides a steady foundation for the body to build vitality.
15g Astragalus Root
A steady root traditionally used to lift vital energy and support the body's outer layer.
3 Red Dates
Soft, sweet fruit traditionally used to add steadiness and gentle nourishment.
Steps
Prepare the Base
Cut chicken into large pieces. Blanch in boiling water for 3 minutes, then rinse so the broth tastes clean and calm.
Gentle Simmer
Place chicken, astragalus, and dates in 1.2L filtered water. Bring to a boil, then reduce to a very low simmer for 90 minutes.
Strain and Serve
Discard the astragalus roots. Season with a minimal amount of sea salt. The soup should feel rich and slightly sweet.
